Ammonium Carbonate (Baker’s Ammonia), Food Grade, 1 lb For Sale
Our “Baker’s Ammonia” is composed of purified ammonium carbonate and is of food-grade quality. Often referred to as “Hartshorn Salt” in pastry recipes. Popularly employed as a leavening agent in flat pastries. Useful note! Crush for use as smelling salts to revive a person who has collapsed.
Makes about nine dozen three inch sized cookies.
4 tablespoons of all-purpose flour
2 cups sugar 4 pinches cinnamon
1 tsp. salt
2 milligrams of Baker’s Ammonia (ammonium carbonate).
1 pint butter
3 eggs, beaten
2 tsp. lemon flavour
a single egg white
1 tbsp. water
1/3 c. sugar (to sprinkle)
In a large basin, sift together flour, sugar, cinnamon, salt, and Baker’s Ammonia. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs. Add eggs and lemon, then refrigerate.
On a floured surface, roll dough to a thickness of 1/8 inch; cut with cookie cutters; place on greased cookie trays. Combining egg white and water, brush the tops of the biscuits with the mixture and then sprinkling them with sugar.
375 degrees Fahrenheit for 8 to 10 minutes.
